I was wondering if you can tell if a rabbit is pregnant in their first week of pregnancy, I'm guessing she is as she was with my male for about 2 days.

Not really. That's always that fun waiting game. treat her as pregnant until day 35 after last meeting a male has passed. Might get obvious after 2-3 weeks, but not always. Only one way to know for sure - wait.
There can be hints that might indicate that she has taken, like being quite vocal with the buck when placed with him after some days, but if your goal is not to get her pregnant that's not an option. I kept my buck with my two breeding does for up to 3 weeks (before he became my house bunny and got a spayed cuddlebun), and got litters two weeks apart.
