So my bun (giant checkered, male, 18lbs), has been put on a diet, yet he eats 3x his size in (unpacked) hay, and ~48oz of water a day, along with a cup of veggies (kale, celery, cilantro, carrot tops, and basil).

He was dropped off in a cardboard box at the pet market when he was 2, so idk what his "childhood" was like.
(He just started this behavior in October)

This isn't much different than his diet before, I just took out a cup and a half of veggies and pellets out of his diet.

The reduced veggies and increased hay consumption, might account for the increases in drinking. But if you're concerned it's due to a possible health issue, particularly if there is any unhealthy weight loss, you should contact a knowledgeable rabbit vet, as unusual increases in thirst, can be a sign of some serious health issues.
