I live in Los Angeles with my two rabbits. I believe my first rabbit was vaccinated about two years ago although I’m not sure cus it was in Japan so they do things a little differently there. My second rabbit was just vaccinated for the first time for her spay a couple weeks ago.

I know it is recommended to get a second shot three weeks later however I’m having a really hard time finding time to make the appointment and pay the cost.

How crucial is it that she gets the second shot?

My rabbits are always indoors and they do not have contact with other animals.

It won't be as effective without the second booster. And even though your rabbits are strictly indoors, the virus can be transmitted from biting insects, as well as tracked in on your(and anyone else entering your home) shoes and clothing if you somehow come in contact with it.

It is possible your rabbits could never come in contact with the virus and be perfectly fine, but with there being several reported cases of RHDV in your area this year, it's a very possible risk. So to best protect your rabbit from the risks of contracting the virus, it really would be best to try and get that second booster done at the recommended time.

If your other rabbit didn't also get a new shot this year, it would be a good idea to get your other rabbit the yearly booster as well. Though if it has been 2 years since the previous vac, your other rabbit may need to have the two shots as well.

It's entirely your choice, but to provide the best possible protection, this is what's recommended.
