I know that I have seen Carolyn mention that youcan freeze the left over canned pumpkin. My question is how do youfreeze it? How long can it be kept frozen? How do you thaw just a smallamount if it is frozen in a chunk?

I separate it into small bags, Fergi, so that when I thaw it, it's justa small amount and I'm not wasting it. It can keep for up to 4-5months.

In the "old days" when I made homemade baby food,I froze it in ice cube containers so I had nice little individual cubesthat I would put in a freezer baggie and take one out as needed.

Thanks Pam, I can't believe I didn't think of that myself having used that method for freezing milk. Pumpkin cubes it will be!
