I rescued a very hairy rabbit a couple months back now, and have been informed by people on here he is a teddy lionhead.

My really question is, he can't see very well as he is so hairy, can I trim the hair round his eyes? Will it grow back ok and not come back thicker or a different texture? I will only trim it, not going to take it right back. I tied his hair up last night which seemed to help lol.

If you're careful, you can... I just gave some tips on lionhead trimming in another thread a moment ago - http://www.rabbitsonline.net/f14/haircuts-bunnies-78397/#post1015257

Basically, don't get too close to the skin with the scissors, avoid whiskers and eyelashes and you'll be fine :). I haven't trimmed Nala in ages (not since she blew her juvenile coat and turned out to be a single-maned lionhead), but I did it a fair amount when she was little.
