Family Ethnic Cuisine Week-need ideas

I want to do a family dinner week featuring a different place or type of food each night for dinner.
I was thinking an apptizer, main dish, side dish, and desert. But thats flexible.
Example: Japan- California Rolls, Tempura, White and Fried Rice, and Fried Ice Cream.
Recipes not needed but are welcome.
Mexican, Chinese, Clasic American, Italian, and Japaneseare what I was thinking.
Also I would appricate ratings of recipes that you have tried and liked. 1 for wont try again and 5 for I loved it.

OHHHH my husband is Mexican I can get you the links for the BEST tacos de barbacoa (bbq) its ... excuse my dirty mind (hope i dont get banned) ORGASM in your mouth!! Also the best ever fruit salad with cream topping called Bionicos... I can make you a list of how they would really eat a meal in Mexico and links to the recipes.
 
If you want authentic, than don't do California rolls. Instead, do something like sashimi. It's also debatable whether fried ice cream came from Japan.
 
I've always loved Greek food. Dunno if you are looking for something more exotic than that. :) This is making me hungry haha.
 
I honestly love Indian food. I love eating vegetarian but if thats not your thing, I suppose you could try something like Lamb Marsala, 4 on my rating!! I love the soups with lentils and tomatoes and the wraps. I'm sure you will see it. Also there is this fried fish that is just to die for, the name starts with a K.... something like Karachi? I'm sorry I'm not much help when it comes to the names but they are popular Indian recipes, I'm sure google will show.

Also LOVE Vietnamese food!! I love the soups, Pho. and You can eat your Pho with veggies, or seafood or meat such as beef, chicken, duck, tripe etc. They have amazing pork rolls AND they have Vermicelli which are soy noodles with salad and you can get different things with it such as minced shrimp, meatballs, pork rolls etc.

Thank you so much for suggestions. We usually eat the same meals, frozen pizza, Pork or beef pot roast, potato of chicken noodel soup,enchiladas, spaghetti, and lasana with a few others. I am now looking into new recipes and I just think this would be a great start. These foods that you have suggested will welcome some nice variety. Thanks
