I'm not sure I see much if any mini-rex - Rex fur is unmistakable, standing up just like velvet, with the guard hairs and undercoat the same length. Rex fur is very soft and smooth, not coarse.

It's a little hard to tell from the photos, but the fur on your bunny seems to be of the more conventional sort, with a plush undercoat and longer guard hairs. Whiskers are usually another giveaway - Rex rabbits have curly and kinked whiskers, rather than the long straight whiskers other rabbits have (I can't see the whiskers in those photographs).

It is exceedingly unlikely that there's any Silver in the mix, if you meant the breed "Silver". Silver rabbits are very rare, and they don't look anything like your bunny - see http://www.rabbitsonline.net/showthread.php?t=77886

To me, the fur color on your rabbit looks kind of like a grey variant on one of the otter or marten colors, or maybe a greyish agouti color - darker on the back and white under the chin and underside. Or, maybe it's one of the chinchilla colors or even a mix with Chinchilla breed? I'll leave that to the breeders on our board, who are much more knowledgable about colors and breeds than I am.

Thanks for your input! I've gone through several "what breed is your rabbit?" sites including the one on this site. None of them seem to come up with much. He's probably just a super mixed breed. I'll go through the help forum on here one more time and post the results.
 
Don't see indications of a breed but I'm pretty sure his color is Sable chinchilla. Sable Chins should have brown eyes
 
I have a American chinchilla rabbit and as soon as I saw your photos in less than a half a second I was sure it was a chinchilla mix! Maybe chinchilla and NZW? I don't know what the other part of the mix is. Probably something white, because pure chinchillas are all salt and pepper with no fading into white. He is adorable by the way. Very unique!
