I am repurposing a huge solid wood tv armoire into a multi-level bunny condo. I need to replace the inset wood panels of the solid wood doors w/ wire.

I have a dwarf Hotot that’s a chewer & Lop that follows his lead when he thinks the chewing leads to FREEDOM!- though it doesn’t.
They’re only exposed to the wire of their overnight housing, each having a xl living world habitat cage.

Which wire is both heavy duty enough & safe for the bunnies to use in the door panels?

You may be able to use a hardware mesh. If the openings are small, bunny won't be able to get a grip to chew it.

The grids from wired cube shelving (9 squares across) might also work.

I used wired closet shelving for mine. Don't know if that could work for your project.

There are also measures you can take to reduce/redirect that bar chewing energy: Training FAQ - WabbitWiki

How things are set up visually/spatially along the pen can impact whether a rabbit is tempted to actually engage in bar chewing.
