So what's the deal with salt sticks? Do rabbits need them?

As long as your rabbit is getting a well balanced diet, then no. If you're including pellets in their diet then those contain all the vitamins and minerals they need.

I agree with majorv, there are enough minerals in the pellets. Salt licks are unnecessary. Some say they may even be harmful.
