I decided to make this thread because we all tend to share recipes back and forth with each other. So I figured with this thread, we could share our personal favorite recipes, family favorites, new things, or recipes we have and would like to try!
Also if anyone wants a specific recipe this could be place to ask to see if anyone has it.
NOTE: If anyone has any "light" recipes or gluten free recipes, please share because sometimes its hard to find those kinds of recipes.

I'll start! One of my specialties is Chicken and Dumplings, I made it last night and it is just so good!
So here is my chicken and dumplings recipe:
CHICKEN:
1. 1-large fryer chicken (4-5lbs) OR if you don't like to touch whole chickens, because you will be elbow deep in it. You could use chicken breast with bones and skin, still about 4-5lbs. It gives the right flavor.
2. 1 lrg onion, peeled and cut in half
3. 3 lrg carrots, cut into lrg pieces
4. 3 stalks celery, cut into lrg pieces
5. season salt, garlic powder and pepper. You'll want to season the chicken pretty well.

DUMPLINGS:
1. 3 cups cake flour
2. 3/4 tsp baking soda
3. 3/4 tsp salt
4. 4.5 tbsp shortening
5. 1 cup milk

1. Place chicken and veggies in stock pot, or crock pot. Cover with water. Bring to a boil, then reduce heat. Cook for about an hour or until cooked through. (About 30 minutes after you start cooking chicken, skip to step 4 to start dumplings or just wait until chicken is done.) *I usually let me chicken cook for about 2 hours, just so its definitely done and very tender. Also if you use a crock pot, put it on high.*

2. When chicken is done, remove from broth, let cool. Remove bone and skin. Cut into medium size pieces, discard bone and chicken.

3. Pour chicken broth through cheese cloth, coffee filter or fine strainer.
Discard veggies. Reserve 6 cups broth for dumplings. *I usually keep the carrots to put back in, but I don't strain the broth. I throw out the celery and most of the onion. I cut the carrots into bite size pieces and put them in the dumplings at the same time as the chicken*

4. Dumplings: Mix flour, baking soda, and salt together. Cut shortening into flour mixture with fingers until it resembles small peas.

5. Add milk 1/4 cup at a time (you may not need a full cup) Stir just until ball dough forms. Don't use too much milk!

6. Roll out dough on floured surface. Roll to about 1/4 inch thick. Using a pizza cutter, cut into 1 x 3 inch rectangles. Place on waxed paper for 30 minutes to harden up a bit.

7. In a large pot or dutch oven, over medium-high heat, bring the broth to a pretty rapid boil. Drop in the dumplings, try to separate them as much as possible so they don't stick together. Rapidly boil for about 6-8 minutes. Stir the dumplings a bit to loosen them up.

8. Add chicken and carrots to the dumplings, return them to a boil. Then reduce heat to low. Keep at a gentle simmer. Cook for about 30 more minutes until dumplings are cooked all the way through and aren't doughy tasting. And until the sauce is thickened. (You'll know!)
Season generously with salt and pepper. (that is why you season the chicken so well in the beginning, because the dumplings will be bland if you don't!)

*If you use store bought chicken broth, you dumplings juice won't thicken up like normal. It still takes good and will still thicken but it won't be AS thick. If I have to use store chicken broth, I dissolve cornstarch in some hot water and add it to the dumplings, at a low boil to make it thicken up a little.

I hope you guys enjoy this if you make it! It seems like a lot when you write it down, but its really pretty easy. It just involves a little bit of prep work!
Its really filling and very hardy. You could serve it with some warm rolls, or a veggie. Enjoy!

One bowl chocolate cake ( even the kids can make this one)

2 cups white sugar 2 eggs
1 3/4 cups of flour ( all purpose ) 1 cup milk
3/4 cup of cocoa powder 1/2 cup veg oil ( I just use 1/2 marg )
1 1/2 teaspoons baking powder 2 teaspoons vanilla extract
1 1/2 teaspoons baking soda 1 cup boiling water
1 teaspoon salt

Directions:
Preheat oven to 350 degrees F. Grease and flour 2 - 9inch pans.
In a large bowl combine sugar, flour, cocoa, baking powder, baking soda and salt. Make a well in the centre and add eggs,milk, oil and vanilla. Beat for 2 minutes at medium speed. Stir in boiling water.
Pour into prepared pans, bake for about 30 - 35 minutes or until toothpick comes out clean. Cool for 10 minutes and then turn onto rack. Continue cooling and then ice.
I have also used this recipe for cupcakes or just one big 9 x 13 cake ( that I have left in the pan)
 
I think Im going to use the cherry vanilla flavored Dr. Pepper. I think it would be even better that way...ill post a pic of it when I make it and definitely let yall know how it is...i am making that and deviled eggs for the party...

One of our favorite things around here is ribs in the crockpot

you just get a pack of the pork country style ribs. Put them in the crockpot with some seasonings of your choice and cover with BBQ sauce and cook on low all day...literally falls off the bone. Easiest recipe for a hearty dinner :)
 
I'm totally excited for this thread :) I'm constantly searching for new things. I will definitely contribute. I will get my recipes out later and add a couple for sure.

This is my recipe for a hot carob drink:

Yield: about 1 cup.

1 cup milk.
1 tbsp carob powder (can be bought at health food store)
1 tbsp sugar or honey.
1 tsp vanilla extract.

substitutes: you can use unsweetened cocoa powder instead of carob powder.

Combine ingredients in a small pot. Stir with a knife or spoon until smooth. Than turn burners on high and heat your drink to 80-100 degrees F depending on how hot you would like your drink to be.
 
Here are a couple of my family faves. FYI....these are NOT healthy :) but oh so yummy!!!

Chicken Enchiladas with Sour Cream/Green Chili Sauce

10 soft tortilla
2 c cooked shredded chicken
2c Monterey jack cheese, shredded
3T butter
3T flour
2 c chicken broth
1 c sour cream
1 (4oz) can diced green chilis

Preheat oven 350. Grease 9x13 pan
Mix chicken and 1 c of cheese. Roll in tortillas, place in 9x13 pan
In sauce pan, melt butter, stir in flour. Cook 1 minute. Add broth and whisk until smooth. Heat over med heat until thick and bubbly.

Stir in sour cream and chilis. Do NOT boil (so as not to curdle)

Pour over enchiladas. Top with remaining cheese (I always use way more here)

Bake for 22 minutes. Then broil high for 3 minutes to brown cheese.
 
Anniversary Chicken

2 T veg oil

4-6 chicken breasts, halved
1/2 c teriyaki sauce
1/2 c ranch dressing
1 c shredded cheddar cheese
4-8 green onions, chopped
1.5 oz bacon pieces (not baco bits, the real bacon pieces)
1T chopped fresh parsley

Preheat oven to 350

In large skillet heat oil over med high heat and cook chicken 4-5 min each side until lightly browned

Place chicken in baking dish

Brush with teriyaki sauce, then spoon on ranch dressing. Sprinkle with cheese, green onions and bacon

Bake 25-35 minutes til juices run clear

Garnish with chopped parsley and serve
 
Agnesthelion, that recipe is basically the same as one my mom has made since I was a little kid :) We put lots of olives in ours though and my mom uses ground beef but I like them with turkey or chicken. My husband LOVES those enchiladas and has requested them for his birthday dinner (instead of going out) more than once!

Let's see, a couple of our absolutely favorite recipes. How about biscuits and cranberry meatballs?

Baking Powder Biscuits

2 C flour
1 T sugar
1 T baking powder
1 t salt
1/3 C shortening or butter
at least 1/2 C buttermilk or milk

Preheat your oven to 425 and grease a round cake pan. In a medium mixing bowl, stir together flour, sugar, baking powder and sat. Cut the shortening or butter into pieces (about 8) and add it to the flour mixture. Use your hand to crumble the fat into the dry stuff until the mixture looks like coarse cornmeal. Stir in the milk with a spoon. Add a little bit more until you have a dough that is just a tiny bit wet. Just stir until it's combined and be careful not to over mix! If you put in too much milk you can add flour a tablespoon at a time to fix it, but it's best to just not add too much milk to begin with. Once your dough is ready, gently form it into 8 balls and flatten them slightly so they're 1 inch thick. Arrange in the cake pan. Bake 15 minutes or until the tops of the biscuits are golden. You can brush the baked biscuits with melted butter if you want.

Yield: 8 biscuits

Cranberry Meatballs

Meatballs:
1 C crumbs (bread, cornflake, cracker, whatevs)
2 T dried minced onion or 1 t onion powder
2 t dried parsley
1 t salt
1/2 t garlic powder
1/4 t black pepper
2 T soy sauce
6 T ketchup
2 eggs
2 lbs lean ground beef

Sauce:
16 oz can jellied cranberry sauce
12 oz bottle chili sauce (the kind next to the ketchup, not the spicy Asian kind)
2 T brown sugar
1 T lemon juice

For the meatballs, preheat the oven to 350 and grease a 9 by 13 baking dish. In a bowl (or gallon plastic bag if you're me!), combine the dry ingredients for the meatballs, then add the soy sauce and eggs until well mixed. Add the ground beef and gently stir/squish until thoroughly combined. Form into meatballs and place in the prepared dish.

To make the sauce, add all ingredients to a medium pan. Mash with a potato masher to break up the cranberry sauce. Cook over medium heat, stirring frequently, until cranberry sauce has melted. Pour over the meatballs. Bake, uncovered, until meatballs have reached an internal temperature of 160 degrees, which will take about 40 minutes. Enjoy over egg noodles or rice.

Yield: 8 servings, about 3 meatballs per person
 
I'll chime back in and give some more of my recipes. Since the holiday's are a few days away, here are a few things to snack on while dinner is cooking! These are the things that I make as an appetizer and after dinner later night snack.

Hot Pretzels:
- 10 cups small pretzels
- 1 package dry ranch
- 1 cup oil
- 1 tsp garlic powder
- 2 tsp cayenne pepper
- 1/2 tsp liquid smoke (its in the condiment isle in the grocery store, near the hot sauces)

1. Mix all the ingredients together and pour over pretzels, coat pretzels well.
2. Bake at 200* for 2 hours.
These are spicey pretzels. But they're SO good, they're really crispy and delicious. As long as you put them in an air tight tin, they'll last for about 4 months.

Hot Chicken Spread:
- 1 can(12 oz) chicken
- 8 oz cream cheese, softened
- 1/2 cup hot sauce
- 1/2 red bell pepper, chopped
- small onion, chopped
- 1 cup shredded cheddar cheese

1. Mix all ingredients together.
2. Bake at 350* for 30 minutes. Top with more shredded cheese. Server with crackers, pretzels, or tortilla chips, or even veggie chips. Its good on just about any kind of dipper. It too is a little spicey.

If you can't tell, I love spicey things! The chicken dip is also a great party dip, its really easy and always a huge hit!

The ones below aren't things I make on the holidays, they're just good things that my family likes.
This is one of my husband's favorites, he loves potatoes!
Sour Cream and Cheddar Potato Casserole
- 6 medium potatoes, cooked and grated
- 1 1/2 tsp salt
- 1 cup sour cream
- 7 green onions, chopped
- 1 cup shredded cheddar cheese
- 1/2 stick butter, melted

1. Combine all ingredients except butter. Spoon into 2 quart greased casserole dish.
2. Pour 1/2 stick of butter over the top.
3. Bake at 400* for about 25 minutes or until lightly golden brown on top.

This one, is just something I love to bring out while entertaining outside. We have lots of cook outs during the summer.
Here is one thats great for outdoor BBQ's and get together's. This is a family favorite of ours too, it goes great with a smoked pork shoulder, which is a summer must have in my house!
Mississippi Hushpuppies
- 1 cup self rising cornmeal
- 1/2 cup self rising flour
- 1 tbsp sugar
- 4 large eggs
- 1/2 cup milk or beer
- 1/2 cup onion, diced
- 1/2 cup green bell pepper, diced
- 1 jalapeno pepper, chopped
- oil

1. Combine first 3 ingredients in large bowl, make a well in the middle of the mixture.
2. Combine egg and next 4 ingredients, stirring well; and add to the dry mixture. Stirring just until moistened.
3. Heat oil to 375* (I used a deep fryer, which worked well. But if you don't have that, then just a few inches of oil in a large pot.)
4. Drop rounded spoonfuls into hot oil, and fry until golden brown. Drain on paper towels and serve immediately. (Chances are, everyone will be standing around the pot to get their hands on these little beauties.)
And yes, they're spicey. lol

I'll add some sweet recipes tomorrow or something. I hope you guys enjoy these things! I never make anything thats healthy for us when I entertain, so if you want healthy it probably won't be coming from me! lol

I'm bringing this thread back! Omg, so many yummy things on here I want to make now!

I made this a week or so ago. It was SO easy and quick and my picky son and hubby gobbled it down. A sure sign that it's good. Not healthy, but good :)

Cheesy BLT pizza:

1 - 12inch pre baked pizza crust (I used thin crust)
4 oz cream cheese, softened
3/4 tsp italian seasoning
1/4 tsp black pepper
2 cups shredded green lettuce
1-2 cups shredded Colby jack cheese (depending on how cheesy you like it)
3/4 cup chopped fresh tomato
5-7 slices bacon, cooked crispy

*preheat oven 400 degrees. Bake crust for about 5 minutes til crispy. Remove and let cool.
*In small bowl mix cream cheese and seasonings. Spread over crust.
*top with remaining ingredients. Serve immediately

(((just my disclaimer here. I nearly doubled the cheese mixture, tomato and bacon. I also put it back in the oven before lettuce and tomato to kinda melt it all together. I hardly ever follow a recipe to the T. I'm always tweaking it a bit))))
