We had... leftovers from T-Day. And pizza dip! I made pizza dip to take to a potluck on Sunday that got canceled at the last minute, so Paul and I have to eat it. It's REALLY good though so no complaints :D
 
grilled hamburgers on sandwich thins, fresh green beans and scalloped potatoes

I also made my first pot of tea in months...finally had a little chilly air to make me want some :)
 
Minda, what are sandwich thins?

Paul managed to forget to go to the grocery store after work, even though I told him exactly what I needed and even sent him pictures of the ingredients right before he left for home. So I'm trying to think what to make with what I have...
 
I was pretty lazy tonight...........whole grain Rice-a-Roni and a Boca veggie burger. I did have some salad, too, so it wasn't completely unhealthy.

Three cups of tea: Ginger; peppermint; and vanilla chamomile.
 
I made this rice, chicken, mushroom,broccoli skillet thing.

Its rice(I used brown rice this time and it worked great, just needed more cooking), diced chicken breast, sliced mushrooms, and broccoli all mixed together with a can of mushroom soup.

Its super easy, has tons of veggies(I add tons of veg) and really good. Also fairly healthy if you use brown rice, less chicken and more veg. Its one of our old regular recipes I've updated to suit our new healthier diet. Sincet the summer when I started cooking differently, my mom has lost 17lbs and I've lost 10lbs :)

I don't know if they're healthier or not, but I love the way they taste and are not as bulky as a regular hamburger bun. They're good for sandwiches, too.

Tonight I made cauliflower cheese for me, and macaroni cheese for Steve. Mainly because I fancied some cauliflower and he hates it. It's kind of fiddly to cook cauliflower, drain it, then cook macaroni and make cheese sauce, but worth it!

We had it with sausages- random but I always like sausages with cauliflower cheese, so Steve had no choice lol.

Last night I made homemade meatballs with tomato sauce and spaghetti. I've gotten lazy recently and been buying the store-made ones but they looked a bit horrible last night so I made my own, and they were soooo good! Steve loved them. I don't use egg or breadcrumbs in them like traditional recipes do but oh well :)
 
I had a baked potato, with sour cream and Bacon Salt. I also sauteed up some veggies I found in my refrigerator, half a zucchini, some spinach, and some beet greens, all sauteed with olive oil and chopped garlic.

Don't tempt me, you may find me on your door step with 4 adorable bunnies :biggrin2: I actually lived in Texas for 4 years, but over by Dallas. One of our neighbors would bring us tamales that his Mexican mother made every year at Christmas. I was a really picky little kid, but I LOVED those tamales. Mmmm.
 
Mmm dinner was good. I made shrimp fajitas. They're so fast! It takes less than 20 minutes from washing the veggies to eating. I saute sliced bell pepper, onion, and mushrooms until they're almost done, then add shrimp and a chopped tomato and salt (I swear, salt is the only seasoning needed). Served with avocado, shredded cheddar and sour cream. They're honestly as good as fajitas at any restaurant. It's weird because fajitas are so expensive at restaurants, but they're also pretty much one of the easiest things ever to make!

We had coleslaw to go with it which is kind of random, but I needed to use the cabbage!
 
Your fajitas sound wonderful! Right up my alley. The only thing I would leave out are the bell peppers - hate them!

I made spahgetti and meatballs with garlic bread last night.
 
I know whatcha mean, myloki. On monday, I passed a kidney stone(VERY painful!) and even when the pain started becoming less painful, I still couldn't eat anything without upchucking it.

But I just had some beef jerkey and canned baby food(lol, I know, strange for an adult to eat baby food - but it's sooooo good!) - I guess you can consider that dinner. I have a really random and poor diet.
 
At the moment i'm making chicken tenderloins coated in bread crumbs and parmesan cheese...and i'm shallow frying them..mmm...and mashed potatos.
