Caught my bunny doing a binky for the first time and thought they would do a few but its just one, is that what I should expect most of the time? Do they binky more if they are more excited?

I used to call Hutch my rocket rabbit as he'd run in very small circles and do a lot of binkies--I sure do miss him. Serena, our Checkered Giant would also binky and that was really something to see as she was 20 pounds--the largest bunny I've ever seen in the flesh.
Bunnies can do many binkies in a row. One of mine usually does 2-3 in a row runs around the sofa (zoomie) then does 2-3 more

I think they do it when they’re having fun. Mine does it when he can get a good run up outside through the door to inside the house.
My bunnies have what I call their binky carpet. It’s in my room and a round fluffy one. Both of them will take turns to have their morning binky and zoomie marathon training just in time to wake me up. It’s my favorite time of the day watching these rabbits. This morning the one bun was trying out something new and was literally just jumping vertically in the air with no traditional binky twist. So cute and so funny. Wishing your bunny an increased binky range 
It varies with all rabbits. Some hardly ever do it, some just explode with binky's. Some will do it more often when something new happens, when they get their special treats, when feeling mischievous, or when introduced into a new area as it can get them more excited to explore. But no matter how much a bun does it, even a little head binky is enough to show they are relaxed, happy, and feel safe.

My lop bunny does binkies a lot every morning when I go to check on him to make sure his got food and water he comes running up to the glass door to great me while flicking his ears at me. He is an outdoor bunny in a secure enclosed space. When I open the door to let him in he jumps up at me while running about doing lots of binkys.
They'll binky randomly, depending on the bunny. Xiao Wu does a ton of mini bunnies throughout the day when she feels hyper, and big ones when she races back into the bedroom from the hall. Loki will binky sometimes, but not often, because Erlong can't really binky at all.
Rexy, our newest edition, was only seen, once, doing a binky.

My Aggressive little baby is coming around. I haven't gotten her spayed yet, but will soon. I am excited to say that she now does these little Binkies every time she sees me! It is so adorable. I can pet her freely now as well. She takes her treats from my hands and obviously loves me. We have bonded! Once she is Spayed, she will have much more room to play. For now she has her room. She is adjusting quite well! I love the Binky's!! I will try to catch her on video.
Here's a clip of my girl. She had just completed the bonding process with her new beau and was finally able to return to her former living space -- happy she was!

My boy bunny is also very aggressive. I got bitten again today. He is not neutered. He literally ran up my leg to bite my hand. I'm trying to train him in the mean time to deter him from constantly trying to bite me. He will even chase me around. I got a stick and I put that in front of him so when he jumps up and lunges at me he bites the stick instead. I got him to chase the stick about and he was doing circles like a puppy chasing his tail I wish I could have filmed him. I think he got dizzy after a while.
I think once he is neutered he will have a lot of potential for training.
I bonded right away with him ever since I rescued him until his hormones kicked in. I can still pet him on some days. He does binkies every time he sees me but gets carried away and starts biting.

They can be trained even before being fixed. Keep a water bottle handy and firmly say no when they do something aggressive. This one rabbit rescue guy told me to stop my leg firmly on the ground, cuz supposedly that's what they do when angry, but mine always looked at it as a challenge and would misbehave still. Now he listens and when he doesn't and sees the spray bottle he instantly stops cuz he doesn't like being squirt. And mine isn't fixed. Just be patient and remember that they are just trying to be "top bunny". As we have to treat them like small children, with consistency being key. You got this!
