How much should my rabbit weigh

I have a 3 & 1/2 month old Rex rabbit at least we believe he is a Rex he could me a mini Rex he eats good and always seems hungry but he just barely got over 3 pounds by last night is that underweight for a Rex should he be eating more he gets unlimited hay and water roughly a 1/4-1/3 cup of pellets and normally a 7-8 inch romane lettuce leaf or the equivalent in bok Choy with some parsley he also gets some pieces of carrot banana or blueberries in moderation every few days
 
Some lines of Rex are rather slow growers but that still seems a bit small for a Rex for me. Note: a lot of the pet rabbits sold as "rex" are really not Rex. They're not rare by any means but one of the most common falsely identified breeds (them and english spot) At this age I'd give it more pellets than that and cut back on the fruits & vegetables, they can use higher protein levels/less sugars at this point to grow.

Our vet agreed that he was a Rex but here is a picture of him when we got him if you want to take a look

Hello, what exactly does this mean? I thought rex rabbits were pretty distinct and straight forward, but is this incorrect? I have three rabbits that are supposedly half Rex.
 
They are pretty distinct and straight forward, once you see them in person and get a feel of their plush coat. However from pictures, it can be hard to see their unique fur type - often rabbits are inaccurately called Rex because they have a similar body shape as Rex rabbits seen in pictures, instead of looking at the fur. Some people that aren't too familiar with rabbits might even call any rabbit that is slightly softer than normal a Rex. The Rex gene is complete recessive, so a first generation Rex cross looks exactly like a "normal" rabbit with no Rex fur and pretty average features so it is hard to tell which rabbits are Rex mixes without knowing the actual parentage.
 
If it stays smaller it could be mini rex which is one of the most common pet rabbit breeds. They will stay between 3-4 1/2 pounds
