Peeing outside the litter box!

Hey! I have a neutered bunny girl that is really lovely.
She's one and a half years old. I started litter training as soon as she arrived as a puppy and she got it really fast! Wouldn't pee or poop outside the litter box.
6 months ago she started to pee just around the litter box. She has two litter boxes and only does that in one of them! The curious part is, she knows it's wrong and goes to the litter box as soon as she realizes I'm staring at her, but she INSISTS in peeing outside the litter box when I'm not looking.
I once talked to the vet and he said she was just stubborn.
Today it was even stranger: after peeing on the floor, she drank her pee soon after! It was the first time I ever saw her do that...
She has enough water, enough food and was never neglected. I work at home so she spends the whole day with me, following me around and playing all day.
Any ideas?
 
I have a similar problem. My rabbit it 3 years old and litter trained, but I can't get her to stop peeing on the couch. She never does it when I am around. It is always when I am in another room. So she knows she is not supposed to be doing it. I've read many articles telling me to clean the area and place part of a soiled paper towel in her cage so she knows that is where she is supposed to go, but that only works if she was just getting litter trained. This seems like a behavior problem like she is challenging me...
 
Peeing on the couch is sort of a “im claiming this seat for myself thing”especially if she does it when you’re not sitting there. Is she spayed? It can be difficult as well once they have peed there once, no matter how much you clean they can still smell it so keep going back.
